South Indian Food :
States in this part of the country make great use of spices and coconut, as most of them have coastal kitchens. In Tamil Nadu, Tamarind is used frequently for a tangy sour flavor.
Must Haves: Idli, Sambar, Dosas, Medu Vadas, Tamarind rice, Lemon rice, Utthappams, coconut chutney
Whereas the cooking style in Andhra Pradesh uses a fair quantity of chilies. Andhra Pradesh is also home to the Hyderabadi style of cooking. The Nizams ruled Hyderabad at one time on a diet of this subtle and exquisite culinary art. You have to have the authentic stuff found here---beware of imitations.
Must Haves: Hyderabadi Biryani, Hara Biryani
Kerala has some of the most delicious stews found anywhere in the world. Lamb stew and appams are a combination to die for. Vegetarians can tickle their tastebuds with Avial (a mixed vegetable preparation with desiccated coconut garnishing is a sure-shot winner. Another famous item of this region is the sweetened coconut milk.
Must Have: Malabar fried prawns, Idlis, Dosas, fish molie and rice puttu (glutinous rice powder steamed like a pudding in a bamboo shoot).
Indian Chinese :
We just had to include this. India and China may be Asian giants competing for a piece of the global pie…but here’s an unique kind of friendship the two countries have struck an unofficial partnership. Indian Chinese cuisine as the name suggests is the Indianised version of Chinese preparations. And it’s a
pan Indian success story. In India, Chinese food like chowmein, chili chicken, fried rice are liked by one and all. But over a period of time Chinese cooking has been Indianised to suit the local palette. It’s tangier and spicier than the real thing. You’ll find Indian
Chinese items with coriander garnishing in the western belt of India. In the northern part of the country Indian Chinese cooking is on the pungent side. In west Bengal, which has a sizeable Chinese population, it’s possible to get as close as you can get to authentic Chinese food. So in keeping up with the trend here are some amazing proofs of Indo-China friendship in the kitchen.
Must Haves: Paneer in hot pepper sauce, Paneer chili, Gobi Manchurian, fried rice, chili fish.
